these are sooo fresh!

freshly puréed watermelon juice with a nice Caribbeanish twist from the coconut. it’s a well needed modern twist to the traditional Cosmo. happy weekend! enjoy responsibly.

baby seedless watermelons weigh roughly about 4 pounds, so.. it you remove the rind and dice the flesh of half a baby seedless watermelon you’ll purée about 2 cups watermelon juice. (see Note below on how to purée). use any left over watermelon juice for my Watermelon Grapefruit Sicilian Sodas.

fast technique to chill a glass: fill glass with ice and cold water. let set to chill, 5 minutes. pour out ice water, now your glass is ready for its cocktail..

Coconut Watermelon Cosmopolitan

1/4 cup freshly puréed, strained watermelon juice (*recipe below)

2 1/4 teaspoons blue agave

3 ounces coconut flavored vodka

2 ounces grand marnier

2 limes – 1 freshly squeezed lime, 1 sliced into wheels

 

fill boston shaker with ice and add all the ingredients above. shake vigorously. pour among 2 chilled martini glasses. spike watermelon cubes with a cocktail toothpick and place inside martini glasses. garnish with lime wheel.

 

serves: 2

*Note: remove rind from a 2 pound seedless watermelon and dice, reserving some watermelon to garnish. place watermelon in a food processor fitted with a blade attachment. purée until liquid. remove to a fine mesh strainer over a bowl. Pour watermelon purée, a little bit at a time into the stainer, pushing through the strainer using a rubber spatula. discard pulp.

{note: Yields 2 cups watermelon juice)
