mmmmm! i crave a juicy and satisfying burger, every once in awhile. one day while at work, we had left over pepperoni and ground beef up for grabs. thats when i thought, i’ll chop up the pepperoni and fold it into a burger. bingo! it was deeeelicious!
theres something about wrapping your lips around that big puffy bun and biting down on flavorful meat while the juice runs down your arm, that completely satisfies you.
i use 85% lean ground beef because there’s enough oil from the pepperoni to baste and flavor the meat… making it sooo juicy! you can dress it with or without lettuce and tomato. either way it’s scrumptious.

Pepperoni Mozzarella Burgers

1 pound 85% lean ground beef
40 slices pepperoni – diced
canola oil
kosher salt / freshly ground black pepper
4 slices part-skim mozzarella cheese
4 kaiser rolls
heat grill over medium heat. in a large bowl add ground beef, pepperoni, season with 1 teaspoon salt and 5 full turns on the pepper mill. mix well with clean hands and divide evenly into 4 balls. press each in between the palms of your hands, forming patties (1/2-inch thick). drizzle little oil over each (to prevent from sticking to the grill).
place burgers on grill and cook 5 – 6 minutes for medium and 8 minutes for well on both sides. the last minute of cooking, add cheese onto each burger and close lid. (be careful of flare-ups). remove to plate to rest 5 minutes. place on buns. serve.
